Sardinian cheese on toast
4 sheets of pane carasau (see ingredients section)
Pecorino stagionato (aged pecorino)
Extra virgin olive oil
I had to include this wonderfully simple dish that can be enjoyed either as a snack or starter.
Simply dress the sheets of bread with olive oil coarse salt and thin slivers of the pecorino cheese and then place in a pre heated oven at 160°c. Leave the bread in the oven only long enough for the cheese to melt remembering that the bread is already crunchy.
